Edo Sushi Express ensures that all consumers receive a safe, high quality product by continually monitoring ingredients from its original source to the final product. We always maintain compliance with business licenses, establishment permits, plus federal, state and local regulations. All franchisees must be certified in HACCP and Good Manufacturing Practices, training in Food Management practices through ServSafe® Manager Certification Program, and proven operations and business management techniques. 

Our commercial kitchen, delivery, catering and retail outlets follow the same quality assurance and food safety requirements. Every franchisee or on-site location has the same concerns as a larger operation. The same knowledge is essential for excellence in quality assurance. Our quality assurance program systematically monitors and evaluates the process of sushi production in every aspect of our business. Our Quality Assurance Program ensures that our high standards of quality are met. It is based upon FDA requirements and training through New York Sea Grant, National Integrated Food Safety Initiative and Cornell Cooperative Extension. This includes, but is not limited to; Pest Control, Standard Sanitation Operation Procedures, Employee Health, Cleaning and Sanitizing Procedures, Production Controls, Raw Materials Ingredients and Storage, Process Controls, and Adulteration Prevention. The current federal GMP regulations specifically apply to all food products regulated by the FDA, and can be found in Part 110 of Title 21 of the Code of Federal Regulations.   Edo Sushi Express bases its Quality Assurance Program upon these federal regulations and FDA requirements.

To continue sustainability in seafood and protect our customers, we never use Bluefin Tuna. The tuna of choice for Edo Sushi Express in Yellowfin Tuna, which contains less mercury than its larger relatives, the Bluefin and Bigeye tunas. Not only does Yellowfin tuna have less mercury, it is exceptional as seared tuna and sashimi.
